Friday Feast: Crepes with Pecan Banana Topping!

I love making crepes on the weekend for my family. Crepes are thin and delicious and you can mix just about anything with them as a topping. They are actually pretty easy to make as well.
I use a stainless steel pan, so those of you with non-stick pans may not need as much of oil as I use. I learned the hard way that you need the right amount of oil in the batter to help it not stick to your pan!
To make crepes, mix the following ingredients:
1 cup all-purpose flour
2 eggs
1 cup milk
1/4 teaspoon salt
3 tablespoons of peanut oil (You may need to add more depending on your pan type, etc)
You whisk this all together. Yes, it is a very wet mixture. I wipe a little bit of peanut oil in the pan with a paper towel and have the heat set under medium.
Pour some of the mixture into the pan and then swirl the pan so that the batter spreads out and makes a thin coating around the bottom of the pan. It only needs 30 or 40 seconds to cook that side. Then use a spatula (or fingernails to lift the edge if necessary!) and flip the crepe over. If you are feeling adventurous, you can try the ole toss in the air and catch it manuever. I've never been successful with that particular activity so I'll leave that to you to decide!
At the same time that I'm cooking the crepes, I'll have a topping cooking on the stove as well. I do my toppings off the cuff. That means I don't follow a recipe. A favorite is pecans and bananas.
I put a few tablespoons of butter in a pot, then add anywhere from 1/4 to a 1/2 of a cup of brown sugar. I add a pinch of salt and a cap full of vanilla and stir it till it starts to boil. Then I toss in a handful of nuts and let that simmer for a little bit, then I cut up a couple of bananas and toss the bananas into the mix. You can add nutmeg, ginger, cinammon or use different fruits, like apples!
I just have fun with the toppings and mix tasty ingredients up until I like the outcome.

omg, I love me some crepes! When we were kids, my mom used tomake them very often....we loved them with jelly, nuttella or fruits, honey, sugar...just about anything
What surprised me with the taste was IHOPs crepes with Hollandaise and chicken! Awesome
Oh yum. I have never made crepes before but I do love the idea of them.
As for the hazelnut stuffed wontons I posted, you can def stay on a diet and still enjoy them:) After all, Nutella is made with skim milk and cocoa. Just have a tiny bit of ice cream :)
I love crepes but rarely make them! Maybe this recipe will inspire me to crepe greatness!!
